These are a favorite with my young athletes and me! As I runner I love to get my carbs in with these yummy sweet potato fries. They are inexpensive and delicious too!⠀

Ingredients
- 2-3 sweet potatoes cut into wedges
- 1/4 cup melted coconut oil or olive oil
- 1 handful chopped fresh rosemary optional
- 1 tsp paprika or to taste
- 2-3 tsp kosher salt or to taste
- pepper to taste

Instructions
- Position rack in upper third of oven and preheat oven to 425 degrees F⠀
- Place sweet potatoes and coconut oil in large bowl, toss lightly
- Sprinkle with salt, pepper and paprika to taste
- Add chopped rosemary if you have some at hand, an option, but gives it such good spark⠀
- Toss all ingredients lightly
- Arrange potatoes in a single layer on prepared baking sheet, being sure not to overcrowd⠀
- Bake until tender and golden brown, turning occasionally. Cooking time is about 20-24 minutes. Cool 5 minutes before serving.
