Grain-Free Berry Muffins
    Ingredients
    • 1cup almond flour * You can use 2 cups almond flour for the 1 cup coconut flour
    • 1cup coconut flour
    • 1tbsp coconut sugar
    • 1tsp baking soda
    • 1/4tsp salt
    • 3large eggspreferably organic
    • 3tbsp unsweetened almond milk
    • 1/4cup raw honey or agave
    • 1tsp vanilla extract
    • 1tbsp raw apple cider vinegar
    • 2tbsp coconut oil or olive oil
    • 1cup blueberries or raspberries
    Instructions
    1. Preheat oven to 350 degrees F
    2. Combine all dry ingredients in a bowl and mix
    3. In a separe bowl, whisk eggs and add milk, honey and vanilla. Stir.
    4. Add the wet ingredients to the bowl of dry ingredients and mix
    5. Line muffin tin with muffin liners and evenly scoop batter into liners about 3/4 filled
    6. Bake for 15-20 minutes. Insert toothpick into muffin and check batter is no longer sticking to toothpick
    7. Drizzle with coconut sugar or honey
    8. Remove from oven and place cooling rack
