WHY SHOULD YOUNG ATHLETES EAT IT?

Bananas are rich in potassium which help strengthen bones.  They are great energy booster thanks to its natural slow-release of sugars and a good source of fiber easing constipation.  Coconut oil boosts digestion and improves immune system.

      Ingredients
      • 1 1/2 cups brown rice flour
      • 1/4 cup ground cinnamon
      • 1 tsp baking soda
      • 1/4 tsp sea salt
      • 4-5 mashed ripe bananas
      • 1/2 cup melted coconut oil
      • 2 tsps raw apple cider vinegar
      Servings: muffins
      Instructions
      1. Get oven ready by preheating it to 350 degrees. Line a 21-cup muffin pan with paper liners.
      2. In a large bowl mix the rice flour, cinnamon, baking soda and sea salt.
      3. In a medium size bowl mix the mashed bananas, coconut oil and apple cider vinegar and add the mix to the large bowl of mixed dry ingredients.
      4. Fill each muffin cup about a little over half of the way full with the batter.
      5. Bake for about 20 minutes. Check to ensure they are done by inserting a fork or toothpick near the center of a muffin. It should be free of batter when baked through.
      6. When done, let them cool on a wire rack.
